The production process of instant coffee involves a series of processes such as pretreatment, baking, grinding, extraction, concentration and drying. In this production process, the risk of high-temperature production is everywhere, and there are more than one process of high-temperature production, which increases the risk of acrylamide. When the heating temperature exceeds 120 degrees Celsius, acrylamide will be generated.

Although freshly ground coffee has to go through the roasting process, there are relatively few steps in the production process, so the acrylamide content can be reduced accordingly. In addition, due to fewer steps, the loss of saturated fatty acids, potassium, magnesium, vitamins and other beneficial components in freshly ground coffee is less, so the overall taste is better than that of instant coffee.

Instant coffee and freshly ground coffee are different in making process, taste and harmful factors. But these differences are not great. Even the harmful substance acrylamide, as long as its content is strictly controlled, its risk can be ignored. As for the subtle differences in taste, for many people, it is impossible to feel directly.
