Yellow rice vinegar is vinegar brewed from rhubarb rice (also called millet), which is made from the seeds of a plant called millet. It is naturally fermented at room temperature, unlike other rice vinegar brewed by barley koji and high temperature distillation. Aging for more than three years can be used as medicine, once every three years.
