Instant coffee is sprayed in hot air at high temperature by spray drying process, so that the water quickly evaporates and forms dry particles or powdery solids. Freeze-dried coffee, on the other hand, uses freeze-drying technology to directly sublimate the moisture of frozen ingredients from ice solid to steam without melting ice.
Freeze-dried coffee retains the flavor of crude coffee oil, and the brewed coffee tastes slightly better and dissolves faster. However, the aroma of instant coffee will overflow with steam after passing through high-temperature water coffee, and high temperature will also destroy the nutritional structure in coffee, so the traditional instant coffee is not as good as freeze-dried coffee in taste.
In terms of price, instant coffee is generally made from lower-priced coffee beans. Coffee beans that can't meet the demand of freshly ground coffee are generally used to make instant coffee with relatively low price and low taste requirements. Freeze-dried coffee, because it can retain the flavor substances in coffee, uses more fine beans, has complicated processing procedures and is more expensive than instant coffee.
Generally speaking, freeze-dried coffee is superior to instant coffee in taste, dissolution speed and price.
