1. Soak in water properly (too much surface water is not good). When it contains a small amount of bound water, liquid nitrogen can crystallize the tissue evenly at low temperature, which is beneficial to grinding.

2. Remove the exocarp. It is easier to extract by removing the outer skin, and the hard outer seed coat is not conducive to extraction.
