So for sugary foods, the speed of absorption is the most important factor, not the heat itself. Each food has its own relative absorption rate of sugar. We can think of it as its GI.
The GI of food is also the sugar index. The level of GI is not directly related to the calories contained in the food itself, but to the protein quality and fiber content contained in it. That is, the higher the mass or fiber content of protein, the lower its GI, and vice versa.
