Preservation method of celery

The fresh-keeping method of celery, celery is a very common vegetable in our life, which is not very high in calories and contains many different ingredients. Eating celery regularly can also achieve the effect of losing weight. The following is the fresh-keeping method of celery.

Preservation methods and storage characteristics of celery 1

The cold tolerance of celery is second only to spinach, and it can be slightly frozen at-1 ~-2℃. If the temperature is too low, the body is easy to freeze and cannot be restored to a fresh state after thawing. It can also be stored in cold storage at 0℃, generally for 2 ~ 3 months. Celery Fusarium wilt is one of the important reasons for celery deterioration, so celery is best stored in a high humidity environment with a relative humidity of 98% ~ 100%.

In cold storage, wooden boxes lined with perforated plastic films or open plastic packaging bags can maintain high humidity and reduce water loss. The air should be unobstructed during storage to avoid the accumulation of respiratory heat. It is reported that celery stored at 0℃ and high humidity, 3% oxygen concentration and 5% carbon dioxide concentration can reduce rot and green change.

2. Variety selection and harvest

Celery can be divided into solid and hollow. Pure colors and green varieties are often selected for storage. This variety has strong cold resistance and extrusion resistance, and can still maintain crisp and tender quality after storage. After storage, the petiole of hollow varieties became chaff, fiber increased and texture was rough. Celery used for storage is the most frost-proof. After first frost, celery leaves turned black, and its storage resistance was greatly reduced. Therefore, celery should be harvested before first frost. When harvesting, shovel the roots, remove the yellow leaves and rotten leaves, and bundle them for storage.

3. Storage method

(1) Frozen storage

The main method is to build a frozen storage cellar on the north side of the wind barrier. The four walls of the cellar are plywood, with a thickness of 50 ~ 70cm and a height of 1 m. When the wall is broken, a wooden pole with a diameter of about l0 cm is erected in the center of the south wall every 0,7 ~1m.. After breaking the wall, pull out the wooden poles to form a row of vertical ventilation pipes on the south wall. Then dig a ventilation ditch with a depth of 10 ~ 30 cm at the bottom of each ventilation pipe, and enter the ground air outlet through the north wall, so that each ventilation pipe, ventilation ditch and air inlet are connected.

Spread two layers of straw in the ventilation ditch, the first layer is thin, bundle celery into a bundle of 5- 10 kg, put it in the cellar with its roots down, and cover it with a thin layer of straw when the celery is full. Cover celery with stalks during the day, pick it at night and cover it the next morning. In the future, it will be covered with * according to the temperature change, and the total thickness will not exceed 20 cm.

When the lowest temperature is above-10℃, all ventilation systems can be turned on; When the temperature is below-1O℃, the air inlet outside the north wall should be blocked, so that the cellar temperature is between-1 ~-2℃, and the cellar depth and covering thickness depend on the local temperature change. The pit depth is generally 80 ~ 100 cm.

Celery is thawed in the same way as spinach. Celery can be taken out and slowly thawed at 0 ~ 2℃ to restore its fresh state. You can also pull out the shade barrier on the south side and replace it with the north wind barrier 5-6 days before leaving the cellar, then buckle the plastic film on the cellar surface, cover it with a layer of frost and shovel it off, leaving the last thin layer, so that the celery in the cellar can be thawed slowly.

(2) False planting and storage

The method is simple. A relatively extensive method is to uproot celery, bundle it into bundles of L, 5 ~ 2 kg or 5 ~ 10 kg, and put the bundles in a storage ditch or under a shed, leaving gaps between the bundles for ventilation.

Another method is to uproot celery and put it in the border or under the shed, or plant celery one by one, leaving a certain gap between plants. Planting method has the longest shelf life; Although the binding method has a large storage capacity, the binding center temperature is high, celery is easy to yellow and rot, and the storage period is short; The storage period of a single tree is somewhere in between. In order to strengthen ventilation, bamboo poles are often placed around celery to prevent celery from lodging and facilitate ventilation.

Generally, the heel width in the groove is L and 5m, and the length is not limited. The depth of the ditch depends on the height of celery, which is beneficial to heat preservation, antifreeze and ventilation. Generally, the trench depth is 1 ~ 1 and 2m, 2/3 underground and 1/3 above ground.

The land was fenced in and celery was buried in the ditch. In order to ventilate and dissipate heat in the ditch and prevent lodging, a straw is erected every l meters between celery. After the celery is inserted, it should be watered immediately to submerge the roots, and then watered l ~ 2 times according to the dry and wet conditions of the soil. After celery enters the ditch, cover the top of the ditch with grass film or scaffolding, and leave ventilation holes as appropriate. In the future, as the temperature drops, the air outlet will be covered. During the whole storage period, the ditch temperature should be kept at about 0℃ to prevent heat damage or frostbite.

(3) cold storage

When celery is stored in cold storage, the storage temperature should be controlled at about 0℃ and the relative humidity should be 98% ~ 100%. Celery can be packed in crates or cartons lined with perforated polyethylene film or in open plastic bags. These packages can not only maintain high humidity and reduce water loss, but also have no risk of carbon dioxide accumulation or lack of oxygen. In order to maintain the high humidity condition in the warehouse, wet sacks can be spread on the ground and kept moist frequently.

At the same time, sufficient ventilation should be maintained to make the temperature of the warehouse uniform. In order to ensure the air circulation around the box, in addition to piling into flower stacks, there should be ventilation channels between stacks, and wooden boards can be added in the middle of the box. If there is no forced ventilation, celery boxes should not be stacked more than 4 floors, otherwise the breathing heat can not be dissipated, which will cause harm. Under the above conditions, celery can be stored for 2 ~ 3 months.

(4) Simple modified atmosphere storage

In recent years, celery has been put into plastic bags in cold storage in Harbin, Shenyang and other places, and stored by simple modified atmosphere method, with good results. The method is to use 0.08 mm' polyethylene film as a bag, and each bag contains 10 ~15 kg of short-rooted celery without plant diseases and insect pests and mechanical damage. The bag mouth is tightly tied and layered on the vegetable rack in the cold storage. The storage temperature is controlled at 0 ~ 2℃.

When the oxygen content in the bag is reduced to about 5% by natural oxygen reduction method, open the bag mouth for ventilation and then tie it tightly. You can also loosen the mouth of the bag, that is, insert a round rod with a diameter of 1 and 5 ~ 2 cm when tying the mouth, pull it out and leave a hole in the mouth of the bag after tying it, and there is no need to manually adjust the gas when storing it. This method can store celery from 10 to the Spring Festival, and the commodity rate is about 90%.

(5) silicon window controlled atmosphere storage

This method is simple and effective. Pre-cool the selected celery for 24 hours in storage, then put it into a silicon window bag, tie the bag tightly and keep the storage temperature at 0 ~ L℃. The specification of the silicon window bag is made of polyethylene plastic film, with a length of 100 cm and a width of 70 cm. The silicon window area is 96 ~ 1 10 cm 2, and the loading capacity is 15 ~ 20 kg. This method can store celery for more than 3 months.

Fresh-keeping methods of celery. How to preserve celery

Celery can't be exposed to the sun, which will cause a lot of water loss in vegetables, and the nutrients will also be lost in a state of serious water shortage, which will also affect the taste of celery. You can't buy too much celery at a time. If you want to keep your moisture, you can keep the celery you bought in a cool place for about a week.

Celery can also be preserved with plastic wrap or plastic bag, and it is best to sprinkle some water on the roots. Celery can be stored for about 5-7 days in a sealed state. Put celery in the fresh-keeping room of the refrigerator. The temperature should not be too low to avoid frostbite. Celery can also be stored in the fresh-keeping room for a week. Celery stems will be preserved for a long time, usually 3 weeks, if they are washed, sealed in a fresh-keeping box and put in the refrigerator when eating.

Another method is to bundle celery and soak their roots in water for 5-7 days.

How to keep celery fresh?

1, cold storage

Put the unfinished celery into a fresh-keeping bag, leave a small mouth for the celery to breathe, and then put it in the refrigerator for refrigeration. This kind of cold storage can keep fresh for about 3-5 days.

2. Frozen storage

First, cut celery into small pieces, wash and drain water, then put it in plastic wrap, exhaust the air in plastic wrap, and finally put it in the freezing area of refrigerator for preservation.

3. Wrap it in paper and keep it.

Celery is very rich in water. If it is not properly preserved, the water in celery will be lost. If you want to keep the water in celery from losing, you can spray some water on the surface of celery first, then wrap celery in paper and put it in a cool and ventilated place. This method can keep good quality and freshness, usually for about a week.

4, put the basin to save

First, string the celery one by one, then put the celery roots down and put them in a basin filled with water. In this way, the water in celery can be preserved, usually for about a week.

Second, what nutrients does celery contain?

Celery is rich in carbohydrates, protein, carotene and trace elements such as calcium, phosphorus and iron, which can promote the secretion of gastric juice and stimulate appetite.

Fresh-keeping method of celery 3 First of all, the easiest way to keep celery moist is to spray some water on celery, then wrap the vegetables with clean newspaper or hard paper and put them in a cool place. This method is simple, practical and effective, so it can be kept for about a week.

Second, tie the celery with a rope, put the roots down and stand in a small pot that is not too big. This can keep the original moisture of celery, so that it will not be dehydrated or dried for a week or so, and it can always be fresh.

Saving in this way can also be saved for a long time.

Thirdly, if you put the wrapped celery in a fresh-keeping bag and put it in the refrigerator, it can also be very easy to keep fresh for several days. And when you want to eat out, the taste will not change.

Fourth, for some people who often go to work and don't have much time to cook, they can eat their own celery first. Then clean the remaining stems, cut them into sections, put them into fresh-keeping bags or boxes, and finally seal the bag mouth or box cover. Be careful not to leak, then put it in the refrigerator and take it out when eating.

Or clean the celery, wrap it in plastic wrap and put it in the refrigerator. This method can be preserved for about two to three weeks, but it is recommended to eat it fresh to reduce the loss of nutrients.

Fifth, let's wrap the fresh vegetables we just bought in plastic bags and store them. It should be noted that the plastic bag we choose must be the kind that can wrap all the leaves. In this way, the celery will be fine after five to seven days, and then it will still be fresh and the taste will not change much.

Sixth, if it is celery, you should first prepare a rectangular cup with almost clean water in it, and then put celery vertically in the cup, just like putting flowers in a vase.

Then cover the vegetables slightly with plastic bags, and finally put them in the refrigerator. This will keep it for about three to five days. When you want to eat, you can use scissors to remove the required amount.
