Miao camellia oleifera

Sour fish
Fish with pickled vegetables is a traditional Miao food with a unique flavor. This sour fish is delicious in color and refreshing in taste. After the Miao people catch fresh fish, they wash it, take out the internal organs, then remove the appropriate amount of salt and Chili powder, add spices, soak it for two or three days, smear glutinous rice flour and corn flour on the fish, put it in the jar layer by layer, cover it and seal it tightly. sour soup
Sour soup, called "Herxiu" in Miao language, is the favorite "perennial dish" of Miao people.
