Modern scientific research has found that there are two kinds of unsaturated fatty acids in fish, namely docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA). These two unsaturated fatty acids are very beneficial to clean and soften blood vessels, reduce blood lipids, strengthen the brain and delay aging. The contents of DHA and EPA in fish oil are higher than those in fish, and fish oil is relatively concentrated in fish head. The contents of DHA(22 c hexaenoic acid) and EPA(20 c pentaenoic acid) in fish head are higher than those in fish.
Harm of fish head
If analyzed purely from the perspective of nutrition, eating more fish heads is really beneficial to people's health. However, according to relevant research data, the pesticide residue in fish head is 5 ~ 10 times higher than that in fish.
Fish head is rich in blood vessels, which is a dense area of residual pesticides and other toxic chemicals. At present, aquaculture and planting in most rural areas of China have entered the chemical age. In order to increase the output per unit area, it is common for some farmers to overuse chemical fertilizers and pesticides. Irrigation water, rainwater, river water and groundwater in farmland bring pesticide residues in soil to the river. After the plankton in the water is eaten, it gradually accumulates in the fish through the food chain, and its toxicity is gradually increasing. These substances are mainly accumulated and distributed in fish heads with relatively concentrated fish oil.
Now the pollution is serious, so it is recommended to eat less.
