Boiled chicken in sauce

Ingredients: chicken nuggets, yellow wine, ginger, onion, oil and salt (appropriate amount)

Exercise:

1: Boil water in a large pot, add 2~3 slices of ginger, add washed chicken after the water boils, and add a spoonful. (Water must drown the whole chicken)

2. When the water boils again, turn off the fire until it is slightly boiling, and stew for 10 minute.

5: When braised chicken, you can prepare sauce at the same time. Chop Jiang Mo, put chopped green onion into a small bowl, and add appropriate seasoning (according to personal taste).

6: Prepare another cauldron and add cold water (ice water is the best). Quickly move the chicken from the hot stew pot to the cold water pot. Keep cooling 15 minutes. During the period, it is necessary to constantly replenish cold water.

Guangdong-style sauce chicken

Douchi chicken is a classic dish in Guangdong. Chicken is tender, smooth and delicious, which is a good choice for adding vegetables.

Ingredients: a chicken. Appropriate amount of onion, 4 slices of ginger, ginger paste, soy sauce, yellow wine, coriander and brown sugar.

1: Chop the onion and chopped green onion separately, chop the ginger into ginger paste, and chop the coriander and put it on a plate for later use.

2. Wash the chicken, drain the water, add ginger slices and onion segments, and add soy sauce, wine, a little salt, a little ginger, peanut oil and sesame oil. And marinate for more than half an hour. Remember to put these materials into the chicken's stomach! Turn it every 10 minute to marinate every part of the chicken.

3: A little peanut oil, add ginger and stir-fry for 30 seconds, add the whole chicken, and fry the opposite side a few times. Then add yellow wine and continue frying.

4: Stir fry until the chicken skin is slightly yellow, and then add soy sauce.

5: Add soy sauce and continue to fry 1 ~ 2 minutes. The fragrance and color are already very good, add water. After boiling, turn to low heat and cook for about 15 ~ 18 minutes.

6: The juice is almost collected. You can add a small amount of brown sugar and soy sauce to color it, and then go out!

Guangdong roast duck

Ingredients: half a duck, salt, soy sauce, oil consumption, sugar, star anise, black pepper, garlic, ginger and honey.

1: Wash the ducks and drain the water.

2: Star anise, ginger and garlic are chopped and put into a container. Add black pepper. Add sugar, soy sauce, oyster sauce and rice wine and mix well.

3. Spread the prepared sauce evenly on the duck (both inside and outside).

4: Seal with a fresh-keeping bag and marinate for one day (you need to turn it over halfway).

5. Hang the salted duck on the grill and put it in the refrigerator to dry the surface moisture.

6. Preheat the oven in advance, put the duck and the grill together, put a baking tray under it (because there will be a lot of oil, so you need to spread oil paper or tin foil), and bake at 160 degrees for 90 minutes (you need to turn the other side in half).

7: Time is up, take it out and coat it with a layer of honey, and then continue baking for 10 minutes.
