There is a poem that says, "Pearls and barley are cooked together, bitter bamboo shoots are covered with white jade ... The mountains are deep, salt cheese is rare, very light and full of flavor." Chinese medicine believes that bitter bamboo shoots are sweet, light, slightly bitter and cold, and have the functions of clearing away heat and diuresis, promoting blood circulation and expelling wind, and can treat diseases such as rheumatism, indigestion, cough and ulcer.
Li Shizhen's Compendium of Materia Medica records that "bitter bamboo shoots taste bitter and sweet, and are mainly used for waking up, removing facial features, yellow and hot tongue coating, quenching thirst and improving eyesight, relieving alcoholism, clearing away heat, invigorating qi, diuresis, purging nitrogen, regulating wind and heat, treating beriberi, treating colds and sweating aphonia". It can be seen that bitter bamboo shoots are rare bamboo shoots for both medicine and food.
