Ingredients of stewed mutton with angelica sinensis

600 grams of mutton

Angelica sinensis 15g

20 grams of codonopsis pilosula (about three strips)

20 grams of longan

20 grams of red dates

Lycium barbarum 15g

Crystal sugar 10 ~ 15g

2 star anise (1.5g)

Two or three bowls of clear water

Steps of stewed mutton with Angelica sinensis

Step 1

Prepare all materials in advance.

Second step

Soak codonopsis pilosula for 15 minutes in advance, brush it with a clean old toothbrush and cut it off for later use. I use a tattoo party, which is said to be one of the best codonopsis pilosula in Gansu.

Third step

Rinse red dates, angelica sinensis and star anise with running water respectively for later use.

Fourth step

Longan and Lycium barbarum almost forgot, but I remembered them when I put them in the pot. Wash these bowls with water. Wash dried longan several times.

Wash the mutton and cut into pieces. Boil the water in the pot and pour out the blood. Repeat this for three or four times until the soup is clear (this is to remove the smell of mutton) and set aside.

Put all the materials into the pressure cooker, add two or three bowls of clear water, and the water surface is flush with the materials. You can put more soup if you want.

Step 7

After the fire boils, turn to low heat and continue to cook 18 minutes (you can smell a strong fragrance).

Step 8

After the pressure cooker is exhausted, add a proper amount of salt to the plate and serve.

1. The amount of rock sugar should not exceed 15g at most. It's too sweet to taste greasy.

2. Cook on low heat for 18 minutes, and it tastes just right when it is out of the pot. Over 18 minutes, the meat may be too rotten and chewy. There is also a pressure cooker, and the time should be increased or decreased appropriately.

3. Angelica longan, red dates, and medlar nourish blood and replenish qi, which is warm and not too big. You can eat it often, but not every day.
