Sweet potato leaf is the leaf of sweet potato vine, also called sweet potato leaf, which is a sweet potato plant of convolvulaceae. It is a kind of sweet potato seedling with tender stem tip for human consumption. It is still known as the "queen of vegetables", "longevity vegetables" and "anti-cancer vegetables" in Hong Kong and even in the world. The Asian Vegetable Research Center lists sweet potato leaves as a highly nutritious vegetable variety.
Sweet potato leaves are nutritious, green, tender and refreshing. Most of its nutrients are much higher than those of spinach and celery, especially carotenoids are three times higher than ordinary carrots and more than 600 times higher than fresh corn and taro.
Sweet potato seedlings are rich in nutrition. Every100g sweet potato bud, the top10-15cm, and the tender leaves and petioles are collectively called stems. Sweet potato stem tips are rich in protein, carotene, vitamins, iron and calcium.
