Before stewing the soup, it is necessary to soak the dictyophora in light salt water, and then cut off the mushroom cover (the closed end of the pedicle). I usually remove the umbrella end (reticular part) of Dictyophora dictyophora, because the biggest odor source of Dictyophora dictyophora comes from these two places.

Agrocybe aegerita, originally a wild mushroom growing in tea buds in the mountainous and dense forest area of Guangchang, Jiangxi Province, is a natural pollution-free and health-care edible fungus with high protein, low fat and low sugar.

The optimized Agrocybe aegerita has crisp cover, pure flavor and excellent taste. It can be cooked into various delicious dishes, and its nutritional value exceeds other edible fungi such as mushrooms. We often drink local old duck soup stewed with Agrocybe aegerita. This soup is delicious.

There are fresh and dried Agrocybe aegerita in the market, and dried Agrocybe aegerita is more fragrant. When choosing Agrocybe aegerita (dried product), it is easy to ignore that the thickness and size of Agrocybe aegerita are consistent.

If the size of Agrocybe aegerita is uneven, it means that these Agrocybe aegerita are not in the growing period, which means that there are old Agrocybe aegerita mixed in it.

Dried mushrooms are thick, the stems are light, and the white ones are not beautiful. It's best to choose a slightly brown one. Besides, smell the aroma of Agrocybe aegerita. Never buy tea mushroom with musty smell.

Auricularia auricula is the most common fungus food we usually eat. Whether it is cooking or cold salad, we will habitually use some, basically "wild" food, and the foaming rate is relatively high. If it's a side dish, just soak it a little.

Cordyceps mushroom soup

Ingredients: 200g lean pork, 5g cordyceps sinensis, 0/0g dictyophora/kloc-,0/0g Agrocybe aegerita/kloc-,0/0g auricularia auricula/kloc-,and 0g jujube/kloc-.

Seasoning material: 6 grams of edible salt.

Production method:

1. Soak Auricularia auricula in warm water for about 2 hours, and let the water slowly penetrate into Auricularia auricula. After the fungus is soaked, clean it for use.

2. Clean the lean pork with rice washing water, cut it into small pieces, soak it in clear water for one hour, and change the water several times in the middle. On the one hand, it can remove the odor, on the other hand, it can let the dirty things in the meat run out.

3. Soak Agrocybe aegerita for about 30 minutes, and then clean it. If there is something dirty at the root of the stem, treat it.

4. Soak Cordyceps sinensis for about 15 minutes, and then clean the floating ash on it for later use. Don't soak Cordyceps sinensis for too long, it will cause the loss of nutrition.

5. Dictyophora dictyophora becomes soft after soaking in light salt water 10 minutes. Clean the reticular corolla and cut off the mushroom cap of dictyophora (this is the source of dictyophora odor). Then clean it again and cut it into sections for later use.

6. Put the cut lean meat into the casserole and add the right amount of water. It's best to add enough at once, and don't add it later. After boiling, skim the floating foam with a spoon, add the Agrocybe aegerita, and simmer with low heat after the water in the pot is boiled again.

7. After stewing for 30 minutes, uncover the pot cover, add the washed red dates, dictyophora and cordyceps in turn, cover the casserole and continue stewing for 30 minutes.

After 8.30 minutes, uncover the pot cover, add the edible salt, cover the pot cover, turn off the fire, and simmer for 10 minutes.

Tips:

1, Cordyceps, Dictyophora, Agrocybe aegerita and Auricularia are all dried products. If Cordyceps sinensis and Agrocybe aegerita are fresh ingredients, put them in the back.

2. Mushroom itself is a delicious food, and it is very suitable for soup with lean meat. Don't put monosodium glutamate or chicken essence, just season with edible salt.
