What is fruit?
Heguozi (Japanese snacks)

And fruits, that is, Japanese snacks, are favored by people at all times. What is Japanese dim sum? Adzuki bean is the main raw material of Japanese dim sum. Boiled and made into bean stuffing, mixed with sweet sugar, it tastes very sweet. Bean stuffing is usually wrapped in rice cakes and made into various exquisite snacks. In addition, there is a typical Japanese snack called "ZENZAI", which is made by adding adzuki beans and rice cakes to a sticky and sweet soup. Mutton soup is also a very representative Japanese snack. "Wild Goose" is a dessert made of sugar pressed into a wood carving model, and there are no adzuki beans in it.

According to the effective records of history, the tea ceremony culture we know in Japan was brought back to Japan by the Japanese envoy to the Tang Dynasty at that time, including tea ceremony culture and pastry skills, which were deeply loved by Japanese nobles. Therefore, Kazuko has many elegant names, such as "Morning Dew", "Zi Ling of the Moon" and "Jinyu Soup", which are all named by Japanese imperial nobles from the song of peace.

After thousands of years of history, the Japanese have already closely combined the fruits of harmony with their own culture and national spirit. Take their national flower cherry blossom as an example. Many inspirations for the production of fruit harmony are based on this, such as the color of pink, the shape of petals, and even cherry petals or salted leaves. Therefore, the harmony of small fruit represents the culture and spirit of Japan. In Japan, harmony fruit is basically a by-product of the tea ceremony, that is, tea is used instead of tea. Su Xinyi, a tea ceremony teacher, said that it is more or less meaningful for Japanese to drink matcha with sweet and greasy fruits of harmony, because sugar can offset the effect of scraping the stomach and removing oil from raw tea.

Wagashi (わがしwagashi) actually refers to Japanese cakes. From the category, it can be divided into two major themes: raw fruit and dried fruit. Raw fruit, also known as main fruit, ascending fruit or morning fruit, refers to fresh cakes made in the morning. Because the shelf life is short, it can only be kept for about two days, so eat it while it is hot. Compared with other kinds of fruit, eating raw fruit pays special attention to the change of shape, so it has become the protagonist of Japanese gift giving. Compared with the freshness requirement of raw fruits, the preserved dried fruits are much sweeter for long-term storage, and are mainly pressed into various shapes with sugar and soybean powder.

The stuffing is mainly red bean stuffing and white bean paste stuffing, and occasionally matcha stuffing is seen. Seasonal fillings include chestnuts, sweet potatoes, plums and persimmons. There are also various combinations of flour and rice (including glutinous rice and Penglai rice). When I arrived in Japan and walked into the fruit shop, I was absolutely dazzled.
