How to make fermented food?
We eat a lot of fermented foods in our life, such as yogurt and stinky tofu.

Bean fermented foods mainly include soybean paste, soy sauce, fermented soybean, fermented bean curd and so on. Douchi is rich in antithrombotic components, which can effectively dissolve thrombus in blood, prevent arteriosclerosis and lower blood pressure. After fermentation, beans can participate in the synthesis of vitamin K. Vitamin K can strengthen bones, prevent osteoporosis, and decompose some factors that are unfavorable to human body, such as oligosaccharides and flatulence factors in beans.

Dairy fermented foods, mainly yogurt and cheese, contain lactic acid bacteria, which can inhibit the growth of intestinal spoilage bacteria, and also contain active substances, which can inhibit the synthesis of cholesterol reductase in the body, stimulate the immune system, mobilize the positive factors of the body, and effectively prevent cancer. Yogurt can also effectively control the rise of blood pressure, prevent arteriosclerosis and protect the heart. In addition, food fermented by lactic acid bacteria can adjust the balance of intestinal flora, increase intestinal peristalsis, keep defecation unobstructed and prevent the occurrence of colorectal cancer.

The method of stinky tofu is to take the tofu out of the box and drain it. Take some kitchen paper and wrap the tofu layer by layer.

Press a flat object on the tofu (I use the bottom of the cake mold) and then press a heavy object (I fill the bowl with water). After about half an hour, the tofu will come out, the height will be reduced, and the water will satisfy you according to your personal preference.

Take out the soaked tofu and cut it into1.5-2cm thick slices.

Put it in a clean oil-free container, loosely cover it with tin foil, don't seal it, don't touch tofu with tin foil, or buckle a plate.

Just wait 1-3 days, depending on the room temperature and the degree of fermentation you like. Personally, I think it is placed at room temperature of about 25 degrees for 2 days.

Pour the fermented bean curd out of the container, evenly sprinkle with high-alcohol liquor, chopped pepper, sesame oil and appropriate amount of salt, put it in a steamer, cook for 20 minutes, take it out and sprinkle with chopped green onion.

If you want to smell better, you can burn some hot oil and pour it on the chopped green onion. Don't bother, eat.

The fried version is to fry the fermented stinky tofu in an oil pan with medium heat until both sides are golden, with your favorite dipping sauce. It is recommended to use soy sauce+vinegar+chopped pepper+sesame oil+chopped green onion.
