1. 10L concentrated orange juice (sugar content 22 Bx, insoluble solids below 0.5%), inoculated with wine yeast, fermented at 20℃ for 3 days, and then ultrafiltered with ultrafilter (cellulose acetate membrane, molecular weight 20000) to obtain ultrafiltrate of 6.5 kg and ultrafiltrate residue of 3.2 kg.
2. The sugar content of the ultrafiltrate is 12.2 Bx (residual sugar 1 1.7%), and the alcohol content is 3.9%. When 800g of sucrose, 55g of citric acid and 5650g of water are added, the mixture is 13kg. The results showed that the sugar content was 20.5 Bx, the acidity was 0.8%, and the alcohol content was 1.95%. Then adding cold water to dilute twice to obtain fermented beverage.
