Ingredients: crucian carp, Flammulina velutipes, rape, ginger, salt, chicken essence and black pepper.
The method of crucian carp soup (oil-free version)
1. First, clean the fish. Boil a pot of boiling water and pour the fish thoroughly.
2. Pour the fish in until it turns white, but don't pour the skin down.
3. Put cold water and ginger slices in the pot. Put the scalded fish in a cold water pot while it is hot. Open a big fire.
4. When the water is boiling, spread the Flammulina velutipes around the fish until it bubbles, and turn to medium and small fire to cover the pot.
5. Cook for about 10 minutes. When the fish soup turns white, put the rape in the pot. When the soup boils again, turn off the heat.
6. Add salt, chicken essence and pepper to taste before cooking.
