Gaoping carries a big bowl ("carrying a big bowl" is a unique dish of Gaoping people in Shanxi Province, with 10 dishes: Shuibainei, Chrome Peach, Bowl, Sichuan Soup, Intestinal Soup, Tofu Soup, Egg Soup, Tianhe Egg, Soft Rice and Lentil Soup. A bowl of delicious food is better than the North and South cuisine series. The dishes in the bowl can also be called "soup", and the quality, taste and color of the working materials are not worse than those of "big dishes". Picking up a Big Bowl is exquisitely made. Choose a good fat pig, kill it and wash it. After that, the tender pig of the chef Eight Immortals was divided into three grades, and began to play with knives. Cut the thin inner into strips for making "chrome peach inner"; Cut the fat inside into pieces with a knife to make it "white and transparent"; Pork bellies and intestines have come in handy. After the chef cuts it, mix it with oil, salt, sauce, vinegar, raw onion, ginger starch and other ingredients, fry it in an oil pan until it is brown, then steam it in a large pot, and then store it in a cool place. The next day, the meal tasted more delicious. "Pick up the big bowl" is good meat, and the raw materials of vegetarian dishes are mostly local products. The most representative and delicious dish is "Tianhe Egg". It takes a lot of effort to cook this dish and to choose the ingredients. Even if the stubble is cooked in winter, the fresh sweet potato stored in the stubble cellar should be cooked together with a pot of sweet potato, and then peeled, such as sweet pulp and "soft noodles" (called in my hometown, thick and charming, especially when cooked, ground into noodles that can be mixed with other foods to make various rice cakes and sweets), jade noodles and starch. The timely fried "Tianhe egg" is brown and tender. If you have the conditions, you can choose the rhubarb pear which is rich in Gaoping, cut it into pieces, wrap it with a layer of starch, and eat it with "Tianhe egg" after frying, which can "add icing on the cake" to your stomach. Before serving, a bowl of "Tianhe egg" is steamed thoroughly in a long pot. The cupbearer pours "Tangxi" hot vines made of ice ponds, red ponds and honey. Sprinkle with some colorful pond silk, the color is dazzling and the taste is excellent. When entertaining guests, the chef puts the cooked dishes into the pot, coffee and fresh chicken soup into the bowl, and then puts some recorded leaves and other dishes, which are particularly fresh. After serving, the coffee is a little bit of Shanxi mature vinegar, and the soup tastes delicious, fat but not greasy, which melts in the mouth and has endless aftertaste. People who like to drink alcohol will have more flavor if they drink two or two fenjiu. )

Gaoping Huangli (a large, festering and water-filled pear) is resistant to storage and transportation. The pond contains 9.98%, the acid content is 0.23%, and the ratio of pond acid is 38.93, which belongs to the upper middle plate. The area of pear orchards in the city is 1.98 million mu, with about 85 plants and an annual output of about 20 million kilograms. Among them, there are about 26 Dahuang pear trees with an annual output of160,000 kg. Mainly produced in Chizhizhuang, Lu Yong, Busan, Zhaozhuang, Yechuan, Duzhai, Chen Qu, Tuanchi and other places. Among them, the rhubarb pear produced in Tielu Village of Chenqu Town is commonly known as the best "Tielu pear", which was once a tribute plate in the Ming and Qing Dynasties. )

Roasted tofu is a unique traditional food board in Gaoping, which has a history of more than 2000 years. According to legend, in the battle of Changping in 260 BC, Zhao Kuo was defeated by General Qin and 400,000 troops of Zhao were killed. Tian Lei's cruelty aroused the hatred of later generations, so it was compared to "Tian Lei is inside", just like boiling water on a fire to vent their anger. Unexpectedly, people feel quite fresh and have a unique flavor after eating it. So "burning tofu" was handed down in Gaoping. Nowadays, "burning tofu" is not only popular in Gaoping, but also often used to entertain guests. During the Hangri War, Commander-in-Chief Zhu De and Commander-in-Chief Peng led eight exposed troops through Gaoping. Every household of the local people cooked tofu and asked their soldiers. After liberation, many party and state leaders came to Gaoping to inspect workers, and they all tasted Gaoping's "burning tofu".
