1.? Except black sesame powder and red bean paste, all the other ingredients are kneaded into dough as soft as earlobe. Remember not to pour all the water in at once, increase or decrease according to the water absorption of your flour. Black sesame powder can be added at this time, kneaded before fermentation, or added after fermentation. This time I added it by the way when I was exhausted after fermentation.
2.? Cover the kneaded dough with plastic wrap and put it in the refrigerator for refrigeration and fermentation until it is 2.5 times larger. This can make good use of time and is very suitable for office workers.
3.? Take out the fermented dough, warm it back and forth for half an hour, and exhaust it for setting.
4.? The wrapped steamed bread is covered with a wet cloth and steamed for 20 minutes in summer and 40 minutes in winter. The steamed stuffed bun feels lighter in your hand than before.
5.? Spread wet gauze on the steamer, arrange the steamed buns, leave some gaps between them, cover them, put them in a cold water pot, boil them, turn to medium heat 10~ 15 minutes, and take them out after 3 minutes. ?

1. There are many kinds of yeasts. I use yeast that can directly contact flour, so I don't need to melt it with warm water first. Don't pour water into flour at one time, divide it into several times, because different flours have different water absorption, so it is appropriate to add water and knead it into dough as soft as earlobe.
2. Oil is not necessarily peanut oil, corn oil, lard, etc. , don't add. But adding oil, especially lard, will make the steamed stuffed bun softer and the finished product whiter.
3. If the buns are soft and delicious, the wrapped buns must be fermented for the second time. This step must not be saved!
4. If you use a stainless steel steamer at home, you can put oil directly on the steamer without padding gauze.
5. The lid of the steamer must be tightly covered. If there is a gap, wrap it tightly with a wet cloth, as shown in the above picture, so that the steamed buns with good appearance can be steamed!
6, cold water steaming, steamed buns remember to open the lid after 3 minutes to prevent the skin of steamed buns from being squashed by air.
