After adding alkali, the vitamins in rice (rice and millet) will be quickly destroyed, so it is not possible to add alkali to rice porridge. However, a small amount of alkali can be added when cooking porridge, because most of corn is bound nicotinic acid, and adding alkali can make bound nicotinic acid become free nicotinic acid, which can be absorbed and utilized by human body. It takes some experience to make porridge until it is not thin, thick and delicious.
