The practice of black tofu: raw materials: pig blood tofu, white tofu, tenderloin, green garlic, pickled pepper, sugar, salt, cooking wine, chicken essence and soy sauce. Steps: Slice two kinds of tofu, chop green garlic, slice tenderloin and size. Add salt and cooking wine to tofu in cold water and cook for 5 minutes. Saute shallots and ginger in a hot pan, add pickled peppers and stir-fry red oil. Add the sliced meat and stir-fry until the sliced meat changes color. Add soy sauce, cooking wine and sugar and continue to stir fry. Add tofu and stir fry slowly. Thicken with minced garlic and stir well. Pour sesame oil into the pot.
