Ingredients: yam, glutinous rice flour, flour, red dates, common dried fruits, walnuts and coconuts.
Exercise:
1, a section of yam, about 150g, sliced, steamed in a steamer for10min, and taken out, regardless of whether it is steamed or not, so that we can steam it in the later operation to avoid hurting hands and make the dough more delicate.
2. Beat the yam into a paste with a machine. When stirring here, add water, only half of the water of yam, as long as the machine moves, as little as possible. Pour the beaten yam paste into a container.
3. Put flour and glutinous rice flour. The ratio of glutinous rice flour to rice flour is 3: 1. You can prepare the flour first, and then pour in the yam paste little by little. Because the water content of yam is not certain, I didn't weigh glutinous rice flour. So that I can hold the weight by myself and paste the yam into a soft ball.
4. Wash red dates and raisins. I used 8 red dates, grabbed a handful of raisins, cut the red dates into pieces, and cut the raisins a few times.
5. Put the cut red dates into the dough together with raisins and broken walnuts.
6. Squeeze a few times with your hands and blend the dried fruit into the glutinous rice balls. You can dip your hand in some oil, whether it sticks to your hand or not. Dipping in oil will make the dough wet and steam it more fragrant.
8. Grab a piece of dough with your hand, which is a little bigger than table tennis. After direct reunion, it will be crushed into a cake with a thickness of 1 cm.
9. The steamer is heated on one side in advance. I spread corn leaves on the steamer. If you don't have children, you can use baking oil paper or zongzi leaves. Don't use gauze drawer cloth, it will be sticky and difficult to take care of. After the water is boiled, steam for 15 minutes.
10, it's time to boil. The steamed biscuits are soft and waxy. Let the air dry. Sprinkle some coconut on each biscuit and stick it gently, which will enhance the fragrance and taste!
Tips:
There are two ways to treat yam. The first method is to steam it for 5 minutes like this, and then use the machine to paste it when it is half cooked, which saves time. You can also steam yam directly and grind it into mud and glutinous rice flour. When it is ground into mud, you don't need to add water to beat it. The proportion of yam will increase and it will be better. If there is enough time, recommend the second method.
I didn't write down the number of ingredients. When I put the dried fruit, I caught it myself. Red dates, common dried fruits and walnuts can be in the same proportion, and more red dates can be made. Jujube and glutinous rice are the best partners. They are very delicious together!
Don't use gauze drawer cloth when steaming. If you don't have corn leaves, zongzi leaves and oiled paper, you can use cabbage leaves, but it doesn't hurt if it smells like vegetables after steaming.
Every year, a large number of corn comes on the market, and I buy whole ears of corn to eat. The corn leaves outside can be dried by subtracting two ends, which can be used for a whole year to make sticky bean bags and so on. It's convenient. The smell of corn is very strong. Remember this method.
