Chop pork, leek and dried seaweed into stuffing, add sesame oil, salt and onion ginger and mix well.

Choose long eggplant, wash it with skin, cut it into thick pieces and connect the two pieces together. Then put the prepared stuffing between two pieces of eggplant and dip both sides in wet starch for later use.
