How to wipe potatoes?
Potato wipe, as the name implies, is made of potatoes, which is a traditional Han food snack in northern Shaanxi, western Shanxi and eastern Gansu. The raw materials and procedures are simple. It is to cut potatoes into slightly thick shreds, then mix them with dry flour, so that each shred is evenly coated with flour, and then steam them in a drawer. Ingredients: potato, flour, green pepper, carrot, onion, garlic, oil, salt, chicken essence and fresh spices. Practice: Peel the potatoes, clean them, wipe them clean, wash off the starch with clear water, drain them, control the water for a while (water must be controlled), pour the shredded potatoes into a larger container, add a proper amount of flour and mix well (you can also add a little starch or not) to ensure that each shredded potato is covered with flour.

Put cold water in the pot, add shredded potatoes, steam for about 15 minutes after the water boils. Time can be increased or decreased according to the amount you do. When steaming shredded potatoes, wash and shred carrots and green peppers, and slice garlic. Wash and chop onions. Stir with chopsticks after steaming, and let it cool for later use.

Put oil in a hot pan, pour in 60% oil and stir-fry chopped green onion until fragrant. Add carrots, green peppers and garlic, stir-fry until 80% done. Pour in the cold shredded potatoes. Add salt, chicken essence and fresh spices and stir well.
