Practice of Chongqing chicken pot trotters
1. Fresh pig's feet, preferably front feet, because front feet are more fleshy than hind legs, pig hands.

2. Clean the pig's feet, clip off the fine hairs with a clip, and it is best to scrape the epidermis with a knife, because the pigskin is dirty, and it will smell if it is not cleaned. Then cut into pieces for later use.

3. Slice ginger and mash garlic.

4. Put the pig's trotters in a casserole (of course, a pressure cooker is ok, but I always use a casserole), add ginger, garlic, wine, brown sugar, vinegar and soy sauce, stir well, marinate for half an hour, and then simmer for about 1 hour.

5. The pot is ready.
