Ingredients: 250g flour, corn flour 100g, 30g seedless jujube, a little raisin, 60g sugar, a little dry yeast and 450ml clear water.
Exercise:
1. Dissolve dry yeast with clear water, pour in flour and corn flour, stir well, knead into a ball, cover it with a wet cloth, and make it twice its original volume. (The proofing temperature is 35-45℃, that is, steaming with water at 35-45℃. You need to control it and stop immediately when the volume doubles. )
2. Knead the fermented dough evenly on the chopping board sprinkled with thin flour and divide it into 3 equal parts.
3. Rub three doughs into a round cake with a thickness of 1.5cm and a diameter of 20, put it on a steamer and sprinkle with a layer of red dates. (Because you want to make three layers of cakes, you should divide them into three parts. )
4, put the second round cake on the first round cake, and then sprinkle a layer of red dates.
5. Repeat the previous step, and finally sprinkle a layer of red dates and raisins on it.
6. Put the steamer on the steamer with water at 45℃, cover it with 1 hour, then bring it to a boil and turn the heat down for 25 minutes. (It is best to increase the volume by 2-3 times after proofing, and the steamed cake will be softer.
