Small university asked, how to cook healthy?
Rice is one of the protagonists in people's daily diet. The main component of rice is carbohydrate, and the protein in rice is protamine. The amino acid composition is relatively complete, which is easy for human body to digest and absorb, but the lysine content in rice is low. Everyone can cook, which seems simple, but there are actually many tricks?

From rice washing to cooking, although there are only a few simple steps, if we can ensure that each process is reasonable, we can steam different rice.

1 Avoid washing rice too many times.

Taomi water will take away many water-soluble nutrients. For example, B vitamins, the first washing loss is as high as more than 25%. Therefore, when washing rice, try to reduce the number of times of washing rice, try to use cold water or warm water, and don't use tap water, boiled water or hard brush.

Avoid using alkali when cooking.

When cooking rice porridge, people may have the habit of adding alkali to stick their mouths. However, alkali will seriously destroy the nutrition of rice. Typical vitamins, such as B vitamins, have good thermal stability in neutral or acidic environment and are easy to decompose when heated in alkaline environment. Moreover, the alkaline environment will affect the absorption and utilization of inorganic salts by human body. Therefore, this unscientific cooking method should be changed.

3 It is advisable to stew rice and avoid fishing.

Stewed rice and fished rice are the two most commonly used cooking methods. Braised rice is to wash rice, put it in a pot, add a proper amount of water, and then heat and cook it or steam it in a cage, which is called "steamed rice" or "cooking rice"; The other is to wash rice, put it in a pot, add several times as much water as rice, and boil it with strong fire. After the rice grains burst, take out the rice, discard the rice soup and stew it again, which is called "fishing rice". People use the method of fishing rice, and the most important thing is that it is easy to master the amount of water added. However, the taste of fishing rice is often not as good as that of braised rice, and from a nutritional point of view, fishing rice loses too much nutrition, which is lost together with rice soup. Therefore, it is not recommended to fish rice as a cooking method. If you want to cook, you'd better make rational use of rice soup.

It is wise to cook in a pressure cooker.

The temperature of the pressure cooker is high, and water and steam can easily penetrate into the rice evenly, so that protein in the rice can be rapidly decomposed and denatured and become a polypeptide or amino acid easily absorbed by the human body. So you can use a pressure cooker to cook rice in your daily life.

Steamed rice also has a coup, vinegar, rice, salt? You can add a little to the rice according to different situations, and the effect will definitely surprise you.

1 add vinegar

If you are worried that you can't finish the rest before steaming rice, you can add a little vinegar to the pot according to the ratio of 1000 grams of rice plus 35 grams of vinegar. The rice steamed in this way is not sour, but more fragrant; Moreover, the leftovers are not easy to deteriorate, and even after reheating, the leftovers are as delicious as the newly steamed ones.

2 add wine

This method is suitable for steaming raw rice. When the steamed rice is found to be raw, add a few drops of white wine to the steamer as soon as possible, then steam it with slow fire for a while and you can eat it.

3 add salt

When old rice is used as raw material to steam rice, a small amount of salt is added, and then the rice is stirred evenly with chopsticks, so that the steamed rice is bright in color and can eliminate stale flavor.

4 come on

Adding a little vegetable oil to rice soup can make the cooked rice softer and sweeter, and the steamed rice is not easy to be too soft.

5 Add soybeans

The content of lysine in rice is low, while that in soybean is rich. It is more comprehensive to add a proper amount of soybeans to steamed rice.

6 "Slope" Steamed Rice Method

The Spring Festival is coming. When the whole family eats together for generations, there is often a contradiction that the old people want to eat soft rice and the young people like to eat hard rice. Some filial children often put rice in the center of the rice cooker for their elders when they are full of rice, thinking that the rice in the center is soft and delicious. Actually, it is not. If you deliberately tilt the rice in the pot before steaming, so that the thick end is less soaked and the thin end is more soaked, then the steamed rice will be both soft and hard, that is, some rice with less soaking is slightly hard, and some rice with more soaking is soft, so it is no longer difficult to adjust.

What if you accidentally cook the rice undercooked or cooked? Try these remedies.

1 The rice is not cooked.

Punch holes in the rice with chopsticks, drop a few drops of rice wine and steam it again. If the rice is raw, you can use chopsticks to pierce some holes that go straight to the bottom of the pot, and then add some warm water to stew it again. If it is a partial sandwich, you can make a hole in it and add some warm water before stewing.

The rice smells of burning.

Accidentally burnt the rice while cooking. You can move the rice cooker away from the fire in time, put some fresh onion pieces on the rice, cover the pot, and take it out after a few minutes, so that the burnt taste of the rice is eliminated. Or cover the rice with a skin and a pot cover. After a few minutes, the shell can absorb the burning smell.
