Formula of stewed old duck soup
1, practice 1

Wash the duck first, cut it into pieces, blanch it in boiling water for a while, then wash it with clear water, and then drain it. Wash sour radish and cut it into thin slices. Heat oil in the pot, saute ginger slices, onion slices, pepper, saute duck slices, cook wine, add sour radish slices and saute until fragrant, add appropriate amount of water, boil over high fire, skim off the floating foam, turn to low heat for about 80 minutes, stew until the duck is cooked, and season with salt.

Firstly, the wax gourd is washed, peeled, peeled and cut into strips; Wash walnut kernel and coix seed. Add a proper amount of water to the soup pot, bring it to a boil, add the cleaned Coicis Semen, cook until the rice is cooked, add the wax gourd strips and walnut kernels, and season the wax gourd with a proper amount of salt after it is cooked.

Bring the fire to a boil, turn to a small fire cover and stew for more than 2 hours. When the duck soup is boiled for about 2 hours, the yam is washed, peeled, cut into hob pieces, poured into a casserole and boiled for about half an hour.

Add some water to the casserole, add the soaked ginger, onion and Hericium erinaceus, and bring to a boil. Then add the duck meat that has been blanched, add the dried oysters, bring to a boil again, simmer for about an hour, then add the bamboo shoots and cook for about ten minutes. Add salt according to your own taste.
