Moutai is a traditional specialty wine in China. It is one of the world's three largest distilled spirits, which is as famous as Scotch whisky and French cognac, and also one of China's three famous wines. It is also the originator of Daqu Maotai-flavor liquor with a history of more than 800 years.
The style and quality characteristics of Kweichow Moutai are "outstanding sauce flavor, elegant and delicate, full-bodied, long aftertaste and lasting fragrance in empty cups". Its special style comes from the unique traditional brewing technology formed over the years, and the brewing method is combined with the agricultural production in Chishui River basin.
Influenced by the environment, seasonal production, dragon boat festival, and eating on Double Ninth Festival all retain some original traces of local life.
1996, Moutai technology was identified as a state secret to be protected. 200 1, the traditional craft of Moutai was included in the first batch of national material and cultural heritage. In 2006, the State Council approved the inclusion of "Moutai traditional brewing technology" in the first batch of national intangible cultural heritage lists, and declared the world intangible cultural heritage.
On February 14, 2003, the former General Administration of Quality Supervision, Inspection and Quarantine approved the protection of Moutai products in the original producing areas. On March 28th, 20 13, the former AQSIQ approved the adjustment of the protection name and scope of Moutai geographical indication products.
The regional production environment of authentic Moutai;
Maotai liquor is named after it is produced in Maotai Town on the Chishui River in Zunyi. Because Maotai Town is located in the river valley, the wind speed is low, which is very conducive to the habitat and reproduction of microorganisms brewing Moutai. In the 1960s and 1970s, experts from all over the country used Moutai technology and raw materials, pit mud, and even workers and technicians to produce in different places, but the products produced could not achieve the same effect.
It also fully proves that Moutai is closely related to the place of origin, and Moutai cannot be cloned. Therefore, in 200 1 year, Moutai became the first product of China liquor to be included in the geographical protection of its origin by the state.
Maotai Distillery is built in the upper reaches of Chishui River, with good water quality, low hardness, rich trace elements and no pollution. The slightly acidic purple soil in the canyon area, warm in winter and hot in summer, little rain and wind, high temperature and high humidity, and the Millennium brewing environment make the air full of rich and unique fragrance.
