Sesame crisp quail

Main raw materials: 6 quails, 25g sesame seeds, 2 egg whites, soy sauce 10g, 2g refined salt, 6g white sugar, 20g cooking wine, 0.5g pepper powder, onion ginger 10g starch 10g sesame oil 20g cooked lard 1000.

Production method: gut, head and claws are removed from quail. Peel 4 pieces of quail, mix with onion, ginger, sugar, soy sauce, cooking wine and salt, and marinate for about 20 minutes to make the meat tasty. Mix egg white and starch into paste, take out salted quail slices, put them into egg paste to make paste, then add a little lard and mix well. Stir-fry sesame seeds in a pot, take them out and sprinkle them on each piece of quail meat. Add lard to the pot, and when the oil temperature reaches 60% to 70%, add quail and fry until golden brown, and pour it into the colander. Put sesame oil in the original pot. Pepper powder and fried quail pieces, turn over twice, take out and serve.
