I accidentally saw this purple potato cake after turning over my mobile phone yesterday. I like to eat purple potatoes, so I took one more look and found that the method is simple, but it should look delicious. It can be used as a staple food for breakfast or lunch, so I tried it today. Purple Potato Cake —— Oil-free and Sugar-free Healthy Cake
Raw materials: purple potato 400g, pure milk 120g, 2 eggs;
Recipe making process:
Step 1: Peel the purple potato and cut it into small pieces, with about 350g purple potato pieces. Milk with ordinary pure milk, or low-fat milk, 2 eggs;
Step 2: put the purple potato pieces into a pot and steam for 20 minutes until cooked;
Step 3: put the steamed purple sweet potato pieces into a large bowl and press them into mud with a spoon;
Step 4: pour the pure milk into the purple potato paste;
Step 5: stir evenly with a spoon, and fully blend the milk and the purple potato paste;
Step 6: put two more eggs in the purple potato paste;
Step 7: continue to stir evenly with a spoon, and mix the eggs with the purple potato paste;
Step 8: Take a 6-inch cake mold, spread tin foil inside it, or use other high-temperature resistant containers to pour the prepared purple sweet potato milk and egg paste into the mold;
Step 9: preheat the oven to 230 degrees, put the mold into the oven, and bake the middle or lower layer for 25 to 30 minutes;
Step 10: This was taken out a little late, so the surface was a little burnt. I'd better observe that the surface is brown. If the time is not up yet, cover it with a piece of tin foil to prevent the color from being too dark.
A simple, easy-to-make, nutritious and healthy purple potato milk cake is ready. Although there is no sugar added, the purple potato itself is sweet. Cake baked with egg liquid will grow taller, but the whole cake is still soft and can't be cut, so it can only be dug with a spoon, which is very suitable for my recent requirements for staple food. I made this today, and I ate a third of it myself. I like it very much, so I decided to buy purple potatoes and cook them in a couple of days.
