Pork classification

Pork, also called dolphin meat, is the meat of domestic pigs, a family of pigs and one of the important animal foods on the table. Fiber is soft, connective tissue is less, and muscle tissue contains more intermuscular fat.

Pork is also processed into canned meat, ham, sausage, cured meat and even pet food.

Pork can be generally divided into four grades according to the meat quality of different parts: super grade (tenderloin), first grade (tenderloin and hind leg meat), second grade (front leg meat and pork belly) and third grade (neck meat, breast meat, front elbow and back elbow).
