First, we take two tomatoes and put a cross knife on them. After laying the flower knife, put the tomato in hot water for about 1 minute, which is to soften the tomato and facilitate peeling. Then remove the roots and dice the tomatoes for later use. Take another piece of tender tofu, cut it into thick slices first, and then cut it into dices. Take a bowl of vegetables, cut parsley into sections, cut shallots into chopped green onion, beat an egg in the bowl, stir and break it into egg liquid for later use.
Boil water in the pot and add a spoonful of salt to the bottom. After the water is boiled, blanch the tofu in the pot to remove the beany smell. When blanching, gently push the tofu to make it evenly heated. After about a minute, pour out the tofu, rinse it with clear water and control the water for later use.
Heat the oil in the pan. After the oil is hot, pour in diced tomatoes, stir-fry for a while, and fully stir-fry the red juice of tomatoes, so that the boiled soup will be more ruddy and delicious. Then pour an appropriate amount of water from the side of the pot, add 3 grams of salt and 2 grams of chicken essence, stir well, and let the seasoning blend into the soup. Turn the fire to boil the soup and skim off the fat in the pot, so that the soup will be lighter and more refreshing.
Pour tofu into the pot, turn to low heat and cook for 2 minutes, so that tofu can fully absorb the flavor of tomato soup, and add a little thin sauce to make the soup more mellow. When the soup boils again, pour the egg liquid into the pot and turn off the heat when you see the egg flowers float. Remember to put coriander and chopped green onion before cooking. These two ingredients only need a little scalding, but they will lose their fragrance if cooked for a long time.
Finally, we put the bean curd soup in the soup basin and add a little sesame oil to enhance the fragrance, which is delicious.
