However, methionine is catalyzed and activated by some enzymes, and an organic substance called homocysteine will be produced during thermophysical and chemical treatment. Modern medicine believes that homocysteine can directly damage endothelial cells in arterial wall, promote the deposition of lipids such as cholesterol and triglyceride in blood and penetrate into arterial wall, form atherosclerotic plaque, and then cause atherosclerosis. Eating too much lean meat will increase the content of methionine and homocysteine, thus accelerating the occurrence of atherosclerosis.

It can be seen that the consumption of lean meat should not be restricted because it has less saturated fatty acids.
