After scalding pig's trotters with hot water to remove fishy smell and excess grease, take them out and wash them with cold water.
Pour a proper amount of water into the casserole (water must be added at one time), and add the processed pig's trotters, red dates and ginger slices.
After the fire boils, turn to medium heat and stew for an hour and a half.
Add yam segments and salt and cook for another half an hour. Sprinkle chopped chives when drinking.
