1. Traditional manufacturing method
The traditional way is to buy fresh beef legs wrapped in meat, remove tendons and cut them into small pieces, then hammer the beef into beef paste with two special square hammer knives weighing about 3 kilograms, then add a proper amount of snow powder, refined salt, first-class fish sauce and monosodium glutamate, hammer them for 15-20 minutes, then put them into a large pot, then add minced fish, white meat and monosodium glutamate and stir them evenly. Then grab the meat pulp with your hands, squeeze it out of the tiger's mouth with your fists to form meatballs, take it out with a spoon, put it in a warm water basin, cook it with slow fire for about 8 minutes, and take it out to become beef balls.
2. homemade beef balls
It is recommended to make beef balls at home:
500 grams of fresh beef, 40 grams of refined salt, 4 grams of seasoning powder, water 100 grams, and 30 grams of horseshoe powder. Cut beef into thin slices, then use a small round hammer to break the meat mallet into slurry, then mix it with clear water, refined salt and water chestnut powder, and then beat beef into beef slurry. Only in this way can fresh beef be gelatinized, and the beef balls with glue are elastic. So when choosing beef, you must use fresh beef.
Let me talk about my personal routine.
Materials:
500g beef, 5 fresh mushrooms, a little onion ginger, 4 eggs, salt 15g, chicken essence 10g, 30ml water and 5g white pepper.
Exercise:
1 Wash the beef and cut it into small pieces. Chop mushrooms, onions and ginger.
2 Put the beef on the dip board, add mushrooms, onions and ginger, and chop it into beef sauce.
3 Put the cut beef into the pot, and add chicken essence, salt, water, protein, starch and white pepper.
4 After adding the seasoning, stir or beat the beef vigorously in one direction with your hands for about 15 minutes. Check the way to get enough strength. First, make a beef ball and put it in a bowl of clear water to see if it will float. If it floats, it means it is good. If it doesn't float, continue to stir in one direction.
Add more water to the pot. Put it on a small fire. Squeeze the beef into meatballs by hand and put it into the pot with a spoon. When finished, boil to remove floating foam. After boiling for one minute, take it out, drain it and let it cool.
