The amount of rock sugar can be adjusted according to personal taste. I don't like it too sweet, so I put it less.
Honey must wait until the tea is cold, otherwise it will destroy the nutrients of honey.
The filtration of jujube paste depends on personal preference. If you like dates, you can leave them unfiltered.
It takes a little time to cut dates, because you have to cut them one by one and remove the core ~ ~
