The method of drinking tea in the Han, Wei and Six Dynasties, as Pi Rixiu said, was "muddy" and boiled into thick soup. At that time, there were no special tea making and drinking utensils. Tea was often cooked in pots and kettles and drunk in bowls.

Du Yu of the Eastern Jin Dynasty wrote Fu, in which he wrote: "Water is the note of the people, and it is clear. These pottery pieces come from the east corner. For example, use Gongliu. However, this is the beginning, and the bubble is ups and downs. Joy is like snow, and it is like spring. " It involves water selection, device selection and tea making. When the tea is cooked, the tea foam sinks and Tang Hua floats, as bright as winter snow and as fresh as spring flowers. You should "consider" scooping tea soup with a spoon and making tea with a tripod and kettle. Spoon it into the ou or bowl "from the east corner" and drink it.

Sui and Tang dynasties-the method of making (flooding) tea

Sui and Tang Dynasties ended the long-term division of Wei, Jin, Southern and Northern Dynasties and established a unified empire. Tea drinking in China became popular from the middle Tang Dynasty, forming a "Bixing drink", which "originated in the Central Plains and flowed beyond the Great Wall". The time in Sui Dynasty was short, and there were few records of tea affairs. Tangyuan is the main tea in the Tang Dynasty, but there are also a small amount of coarse tea, loose tea and rice tea. During the Sui and Tang Dynasties, there were two ways to drink tea: making tea and frying tea.

Song-tea ordering method in the Five Dynasties

Zongzi was the main tea in the Five Dynasties, but its production was more exquisite than that in the Tang Dynasty, and there were also famous products in loose tea. In the early and middle period of Song Dynasty, tea was mainly made of tea scraps (jiaozi and cakes). By the end of the Song Dynasty, scattered tea took the lead instead of sliced tea. Tea drinking in the Five Dynasties and the Song Dynasty not only inherited the method of frying and cooking tea in the Sui and Tang Dynasties, but also improved the method of ordering tea.

Different from the tea-frying method in the Tang Dynasty, the tea-ordering method is no longer directly brew tea in the pot, but first crushes the cake tea and puts it in a bowl for later use. Boil water in a kettle, initially pour some tea leaves into a bowl to make it paste, then inject boiling water, or directly inject boiling water into a tea bowl, while stirring with a tea basket (a tool made of fine bamboo) to make tea foam float to form porridge noodles.

Yuan, Ming and Qing dynasties-tea making method

Tea in Yuan Dynasty was mainly loose tea and end tea, while leaf tea (loose tea) was the only one in Ming Dynasty. In the Five Dynasties, the tea-ordering method was also popularized in the Song Dynasty. The tea-ordering method essentially belongs to the tea-making method and is a special tea-making method. The biggest difference between ordering tea and making tea is that ordering tea requires mixing and brushing, but making tea does not require this. During the Five Dynasties, the tea ordering method prevailed in the Song Dynasty, so the method of making tea is unknown.
