According to legend, the officers and men of the Song Dynasty were defeated and fled to the south. Came to Changting County, Longyan, Fujian. Finally settled down and lived in harmony with the local aborigines. For a long time, the female family members who went south with the officers and men missed their hometown in the north day and night, especially Jiaozi, and never forgot their hometown.
In order to understand the family members' thoughts, the officers and men wanted to give them a meal of jiaozi, but Changting did not produce wheat or flour. When I was sad, I suddenly remembered that Changting is rich in tofu (now Changting's dried tofu is one of the eight famous dry goods in western Fujian). So, I had a brainwave, why not replace flour with tofu and stuff meat into tofu, just like flour wrapped in meat, steamed and fried. I didn't expect it to taste fresh, smooth and delicious, and it has been handed down.
Because tofu is pronounced "Dafu" in Hakka dialect, it is a very auspicious name. Therefore, in the first month, whenever a guest comes to visit, this dish will be the first course of the whole banquet and dedicated to relatives and friends. It has gradually become a reserved dish for Hakka people in the New Year, spreading in Fujian, Guangdong, Jiangxi and other Hakka areas. On holidays or when entertaining guests, Hakkas will make tofu and take the homonym "Da" for "tofu".
Practice of making tofu by Hakka in Changting;
Ingredients: tofu (south)1000g, pork (fat and thin) 400g.
Accessories: Lentinus edodes (fresh) 100g.
Seasoning: monosodium glutamate 5g, scallion 20g, salt 10g, lard (refined) 40g, pepper 3g, soy sauce 10g, starch (broad bean) 20g and sesame oil 15g.
Steps:
Stuffed tofu
Chop pork into mud;
After removing the roots, the onion is washed and cut into pieces;
The mushroom is pedicled, washed, squeezed out, and chopped into mud;
Stir pork sauce with mushroom sauce, chopped green onion, starch, salt, soy sauce, pepper and lard to form a gelatinous filling. Pork paste must be chopped by hand, otherwise the particles are too small to be stuffed into tofu;
Take a piece of tofu (about 4cm long, 3cm wide, 1 cm thick) of appropriate size and put it on the palm of your hand. Poke a hole in the middle of the tofu with chopsticks, then put a proper amount of stuffing in the hole, and poke the stuffing into the hole with chopsticks. This step is highly technical, and people with rough hands and feet can't do it well. Too much stuffing is easy to explode tofu, too little is not delicious, and the stuffing is all on the surface. The trick is to gently surround the tofu with the heel of the thumb, the fingertips of the thumb, the index finger, the middle finger and the little finger to prevent the tofu from breaking. So do it one by one; It is too difficult to brew fresh tofu with fried tofu;
Put the pot on medium heat, add proper amount of lard and heat it to 70% heat. Put the brewed tofu into the pot one by one and fry until golden brown, then add pig oil and fry the other side.
Boil soup, monosodium glutamate, salt, soy sauce and lard in another pot, and cook the fried tofu;
Collect the juice and take it out of the pot.
