Not every kind of oyster is suitable for eating raw.

Although oysters are common all over the world, not every kind of oysters is suitable for raw eating, which is limited by the physiological characteristics, environment and historical conditions of oysters themselves.

Oyster is a unique fixed shellfish, which mainly feeds on micro zooplankton, diatoms and organic debris. It generates airflow in water by vibrating cilia on gills. Water enters gills, suspended particles in water are stuck by mucus, and cilia and tentacles on gills classify particles according to size. Then the small particles are sent to the mouth, and the large particles are transported to the edge of the film and thrown out. It is this unique eating method that determines the quality of seawater in the sea area where oysters are located, and their taste and eating safety are also very different.

1. Due to the deterioration of ecological environment, these oysters are not suitable to be eaten raw in the southeast coastal waters of China. Therefore, in China, oysters are mostly cooked with mashed garlic and charcoal. In the coastal areas of Fujian and Guangdong, it is more popular to dry oysters and cook porridge, so the local dialect also calls oysters "oysters".

Especially in China, oysters are rare in China. What kind of oysters can be eaten raw?

Oysters that can be eaten raw are generally required to grow in first-class waters. Aquatic products in the secondary sea area are only suitable for cooked food. Generally, the three types of sea areas can only be suitable for swimming, and aquaculture or fishing of aquatic products is not allowed in countries with standardized food management. It is not suitable for swimming in Grade IV waters. Generally, such sea areas are only suitable for docks.

Due to the weak management of China's sea areas,1July 1997, the United States banned the import of China oysters on the grounds of unequal management of sea areas; At the same time, the EU has also issued 386 regulations prohibiting the import of China oysters.

According to the environmental function and protection target of surface water, it is divided into five categories according to the functional level:

Class I is mainly applicable to source water and national nature reserves;

Class II is mainly suitable for first-class protected areas such as centralized drinking water surface water sources, rare aquatic habitats, spawning grounds for fish and shrimp, and feeding grounds for larvae and juveniles.

Class III is mainly suitable for centralized drinking water surface water sources, fish and shrimp wintering grounds, migration routes, aquaculture areas and other fishery waters and secondary protected areas in swimming areas;

Class Ⅳ is mainly applicable to general industrial waters and recreational waters that the human body does not directly contact;

Class V is mainly applicable to agricultural water use areas and waters with general landscape requirements.

The risk of eating oysters raw

There are three main risks in eating oysters raw: microbial pathogen pollution, heavy metal pollution and shellfish toxin pollution.

1, microbial pathogen pollution can still be avoided by cooking. The standard of purifying oysters from the market to raw food is also a means adopted by many countries. The taste of fresh oysters is basically the taste of sea water. Only when the seawater is polluted and stinks, oysters growing in it will have an unpleasant smell, so oysters with excessive smell should be eaten raw carefully.

2. Heavy metal pollution is easily overlooked. Oyster is a filter-feeding organism with strong ability to accumulate heavy metals, but conventional cooking methods cannot eliminate the harm of heavy metals. Therefore, it is very important to choose the sea area without heavy metal pollution for oyster culture. Oysters with heavy metals exceeding the standard should be moved to the conditional sea area for culture, and can not enter the market for sale to consumers until the heavy metal index reaches the raw food standard.

3. There is shellfish poisoning, which, like microorganisms and heavy metals, is not produced by oysters, but also caused by environmental impact. Shellfish poisoning is mainly caused by oysters eating some algae in polluted and eutrophic seawater, which leads to the accumulation of shellfish poisoning. Shellfish toxins mainly include paralytic shellfish toxins and diarrheal shellfish toxins. These toxins can not only be used for raw food, but also for cooked food, because high temperature can not destroy shellfish toxins. Shellfish poisoning, like heavy metals, cannot enter the market before it is found to exceed the standard, and must be transferred to conditional sea areas for aquaculture.

How to eat oysters raw?
