This legend was created long ago by Chen Guqiu, a Beijing tea merchant. Why did Chen Guqiu think of adding jasmine to tea? There is also a little story. One winter, Chen Guqiu invited a tea taster to study what kind of tea northerners like to drink. When commenting on tea, Chen Guqiu suddenly remembered that a southern girl gave him a bag of tea that he had never tasted, and found it for the master to taste. When brewing, as soon as the bowl cover is opened, there is a strange smell. Then, in the rising heat wave, I saw a beautiful girl holding a bunch of jasmine in her hands, and soon it turned into a hot air. Chen Jiaqiu was puzzled and asked the master. The master smiled and said, "Brother Chen, you have done a good thing. This is the unique' Thanksgiving Fairy' in tea. I have only heard of it before, but I saw it with my own eyes today. Who gave you this tea? " Chen Guqiu told the story of an orphan girl who went to the south to buy tea and live in an inn three years ago. The girl complained that her father's body was parked at home and she had no money for the funeral. Deeply sympathetic, Chen Jiaqiu gave her some money and asked her neighbors to help her move to a relative's house. Three years later, when he went to the south again this spring, the innkeeper handed him this packet of tea, saying that it was given by the girl three years ago. It was not brewed at that time, but it was a treasure. The master said, "This tea is a treasure and a must. It takes a lot of energy to make this kind of tea. You may never see this girl again. " Chen Guqiu said that he had asked the innkeeper, who said that the girl had been dead for more than a year. They sighed for a while, and the master suddenly said, "Why is she holding Molly alone?" The two men brewed again, and the girl with jasmine in her hand appeared again. While sipping tea, Chen Guqiu realized, "In my opinion, this is tea fairy's suggestion that jasmine can be used in tea." The following year, jasmine was added to the tea, so it was made into a fragrant and attractive jasmine tea, which was deeply loved by northerners. Since then, there has been a new tea variety, jasmine tea.

The main factors affecting the quality change of jasmine tea during storage are temperature, water content, oxygen and light. Generally speaking, the water content of tea is the most important factor. Followed by temperature and oxygen, and light is easier to control. Generally, the water content of finished tea products should be kept below 5%, so the quality changes slowly. The water content of the finished jasmine tea is close to 8%. Therefore, it is sensitive to humidity, and the relative humidity of the surrounding environment directly affects the moisture absorption speed of tea. Therefore, bulk jasmine tea is best stored in a low-temperature and dry warehouse. The ideal situation is that the temperature is below 5 degrees and the relative temperature is about 50%. However, in the concrete implementation, it is necessary to consider the economic effect and adopt a slightly higher temperature. Oxygen will promote the deterioration of scented tea. Therefore, regardless of the size of the package, it should be tightly packed to minimize the gaps in the container and reduce the contact between tea and oxygen. In order to better protect the quality of finished products, if conditions permit, we can consider pumping nitrogen and sealing packaging. In the storage of bulk tea, we should also pay attention to the timely treatment of less than one box of packaged tea. The color and taste of tea soup are greatly influenced by the large gap and oxygen in the end-stacked tea box. And it is easy to cause lipid peroxidation in tea to age or even deteriorate. Because the package is sometimes unpacked, you must pay more attention when storing jasmine tea in retail stores. Generally don't just open the box. If necessary, it should also be sealed with an opening to prevent the fragrance from escaping and the tea leaves from regaining moisture.
