The method of authentic jujube paste stuffing
Jujube paste, as the name implies, is a paste-like filling made of red dates after removing the core. The jujube flavor is naturally rich, and the entrance is silky and sweet.

Specific production method

Step 1: Prepare the ingredients. 800g of red dates, 60g of corn oil and proper amount of water.

Step 2: Clean the red dates and remove the stones.

Step 3: After all the red dates are pitted, put them into the pot, add twice as much water, and then start stewing until the red dates are soft and rotten, which can be easily punctured with chopsticks. During this period, the house is full of jujube fragrance, sweet and appetizing.

Step 4: After the red dates are cooked, take them out and put them into a high-speed blender, and then add a little water (it is not recommended to put too much water, as long as the wall-breaking function is normal. If there is too much water, it will be especially difficult for us to fry them for a long time. Then, start the high-speed blender and beat the red dates into a fine paste.

Step 5: Paste the beaten jujube paste through the secondary sieve and put it directly into the pot, as shown in the figure. Sieving can make jujube paste more delicate and taste better.

Step 6: Sieve them all and put them on the stove. Turn on a small fire and start to stir fry. The significance of frying is mainly to dry the excess water in jujube paste to prevent the pot from being burnt in this process. So, keep stirring.

Step 7: Stir-fry until the jujube paste is dry. Put one teaspoon of oil into the pot at a time, and then put the second teaspoon after the oil is completely absorbed, about four or five times.

Step 8: Stir-fry constantly, during which the color of jujube paste will become darker and darker.

Step 9: Turn off the fire until the jujube paste is caked and does not stick to the pan and shovel, and the surface is smooth. Stir-fry a few times after turning off the fire, because the bottom of the pot is still warm at this time, and it is easy to paste if you don't stir-fry.

Step 10: After the fried jujube paste is cooled, put it into a fresh-keeping bag and take it out when making moon cakes or other snacks.

Cooking jujube paste at home, the most tiring person is cooking, which takes a long time, about 40-60 minutes, depending on how much water there is in jujube paste. There is too much water, so it is natural to fry for a while.

I suggest that you can fry instead of two people. Don't be too tired, and time will pass unconsciously. If you do it alone, you can turn off the fire halfway, have a rest and fry it. Just stir-fry a few more times after turning off the fire. After all, there is residual temperature in the pot, and it will burn if it is not fried. In addition, when frying jujube paste, you must use a non-stick pan to do it.

If you don't have a high-speed blender or cooking machine, you can boil the dates until they are soft, then put them on a sieve and roll them back and forth with a spoon for many times, so that the jujube paste is more delicate.

The prepared jujube paste can be refrigerated for 4-5 days and 20-30 days, depending on the situation.
