How to make black tofu?
Black tofu made of black beans is also comparable to white tofu made of soybeans. It is made by soaking black beans, grinding, boiling, baking and pressing.

In the northeast, black tofu is made of black beans, which is similar to white tofu. Because of the high protein content of black beans, black tofu has good elasticity and tastes more tender. First, soak the prepared dry black beans in clear water for about 5-8 hours, then rinse the soaked black beans with clear water, and then put them into a soymilk machine and add clear water to make them into fine pieces. The ratio of water to black beans is 2: 1.

Filter the twisted black soybean milk with a filter, which can be repeated several times to make it as delicate as possible. Put the filtered soybean milk into the pot and start cooking. When cooking in a large pot, you need to stir while cooking to prevent the pot from sticking. This will not happen if you use a rice cooker. It is recommended to cook with an electric cooker.

Boil for about five minutes, turn off the heat, then remove the floating foam on it and let it cool for a while. Let the cooked soybean milk cool to about 80 degrees. Start pouring lemon juice and stir the soybean milk until it is solidified. If it is not enough, heat and boil again.

Wrap the solidified tofu flower with filter cloth and press it into shape with a container. Black tofu was made successfully.
