1. Preparation before production
250g of walnut kernel, 0/00g of medlar/kloc, 200g of red dates, 250g of donkey-hide gelatin, 500ml of yellow wine, 200g of crystal sugar and 250g of black sesame seeds.
Preparation tools: wok (copper pot does not stick to casserole, does not stick to iron pot), spoon (requirements are the same as above), plastic wrap, template.
Saute or bake peeled dates and walnuts. If jujube contains moisture, it will affect the taste and quality of Ejiao cake. Without water, Ejiao cake is not easy to deteriorate and will last longer. Black sesame seeds should also be washed one day in advance to control the moisture content, and then stir-fry in a dry pan without oil until the fragrance of black sesame seeds is fried.

Soak donkey-hide gelatin in yellow wine for more than 24 hours, so that yellow wine and donkey-hide gelatin can be integrated. At present, most pharmacies and other brands of Ejiao are pursuing efficiency. Ejiao is directly boiled with yellow wine, which can't make Ejiao work.
Soak for 24 ~ 48h until the glue softens and there are no lumps, and then proceed to the next step.
Note: If the temperature is high, put the yellow wine in the refrigerator.
boiling
Start cooking Ejiao cake, put rock sugar and brown sugar into yellow wine, and stir slowly with low fire. It is very important to master the temperature and not to burn the pot. In the process of boiling sugar, everyone must keep stirring with a shovel to avoid sticking to the pot.
The most crucial step is to boil the donkey-hide gelatin until it hangs a flag, that is, shovel it into pieces with wood, like a flag. Make Ejiao cake as little as possible for the first time. Although it takes a long time, it will reduce the failure of Ejiao cake to cook because of the paste pot. This process will test your patience.
Flip and mix
Add other ingredients after hanging the flag, otherwise the Ejiao cake will be too soft to cut into pieces, but it can't be cooked for too long and mixed unevenly. Then add walnuts, red dates and medlar and stir well. Finally, add black sesame seeds and stir well, then turn off the heat and take out the pot. It's best to do it in order. If black sesame seeds are added first, then other things are added, and the stirring is uneven.
Complete design
After taking out the pot, pour it into the prepared dish, flatten it with a wooden shovel, cool it thoroughly, and then put it in the refrigerator for at least two hours, or naturally put it until the Ejiao cake hardens, and then cut it into pieces, and a delicious Ejiao cake is ready.
