1. First put the chicken leg bones into the pot, and scrape the scum after the water boils.
2. Then slice or strip the ginger with a knife, and prepare the shrimp skin (shrimp skin need not be washed).
3. Put ginger, salt and shrimp into the pot, cover the pot and cook for 40 minutes.
4. If it is directly used to make soup base, it is recommended to put less or no salt, because the shrimp skin itself has a salty taste.
If it is used to make broth, you can add more salt to make the broth last longer.
