The difference between sweet vinegar and aged vinegar
Old vinegar and fragrant vinegar belong to brewing vinegar. But the difference is:

1. Different raw materials are used: Mature vinegar is generally made from sorghum, barley and peas through complicated processes. Aromatic vinegar is made from glutinous rice through various processes.

2. Different shades of color: the color of aged vinegar is dark, while the color of fragrant vinegar is light (different drying time).

3. Different nutrients

The content of (1) acetic acid is different.

The acetic acid content of aged vinegar can reach more than 10%, while that of aromatic vinegar is generally 5%-6%.

(2) Different nitrogen content

Generally, the aged vinegar is about 1.2%, and the aromatic vinegar is generally between 0.2% and 0.5%.

(3) the difference of carbohydrate content

Aromatic vinegar is between 3% and 4%, while mature vinegar can be as high as 12%. Generally speaking, mature vinegar is rich in vinegar flavor, which is the best in vinegar and contains more nutrients than balsamic vinegar. The characteristic of balsamic vinegar is sweetness. Mainly used for cold salad and so on.
