Bao 'aiqi vinegar is produced in Funing County, Wenshan Zhuang and Miao Autonomous Prefecture, Yunnan Province. The brewing history of Pai vinegar has been more than 300 years, which has been recorded in many functions and disdains in the Ming Dynasty. There is a special brewing method for peeling Aiqi vinegar. Stripping Aiqi vinegar is made of glutinous rice as the main raw material and stripping Aiqi River water. The production of peeling seven vinegar needs to go through three processes: soaking rice, fermenting and stirring. Each production process takes seven days, so it is called "seven vinegar".
