Because 90% of olive oil is mainly produced in Spain, Italy, Greece and other Mediterranean countries (because olive trees are only suitable for growing in the Mediterranean climate), these countries are basically EU countries, and the packaging instructions of food must conform to EU standards and norms, so no matter how different the imported olive oil brands are, the grades are uniform.

The best grade is extravirgin, which is virgin olive oil. Compared with the oil currently produced in China, this kind of oil has not been refined or subjected to high temperature, and its nutrition has been retained only by low-temperature pressing. By the way, the vegetable oil that we often eat, such as soybean oil or palm oil, is generally produced by chemical leaching method, that is, the oil is extracted by soaking with chemicals. This leaching method has high oil yield, thus reducing the cost. But obviously, the leaching method may have adverse reactions to oil, at least to people who eat this oil.

The crude oil obtained by leaching is dark brown and turbid, and then it is refined at high temperature and high pressure by four removal processes: decoloration, deodorization and so on. The crude oil is thinner every time, clearer every time, and finally completely removed. It is a transparent oil with a little yellowish color. It is conceivable that there is no nutrition in it, and it is a lubricant for cooking.

Even the peanut oil obtained by pressing method (the crude oil of peanut oil is as red as blood) has to be refined at high temperature, and the oil finally sold has no nutrition.

Consumers don't want to think about what vitamin A oil is popular now. If this oil is nutritious, what vitamin A should be added?

Far from the point, let's go on to say that the next grade of olive oil is refined oil, (pure) or nothing. The above is olive oil, which is the oil that many people in China call 100% olive oil. In fact, it is just an oil, which is also obtained through the above refining process. The only difference is that he will blend 10-20% virgin olive oil to enhance its fragrance. Many businesses are selling this oil, saying it is the best.

What is even more exasperating is that some merchants will sell a kind of residual oil as high-grade olive oil. This olive oil will be marked: pomace or refined, and Italian residual oil will be marked with sansa. Generally, 4% of the residual oil in the pomace is not squeezed out, so the refinery will recover the pomace, extract the oil by chemical leaching, and then refine it to get the oil.
