2. Steam the soaked yellow rice in a steamer or rice cooker. First slightly stuffy for about 20 minutes, and then spread out to cool, so that millet rice can be clear and full of water.

3. Chop the sweet distiller's yeast into powder or directly use the clinker distiller's yeast to make the rice contact with the bacterial powder evenly.

4. When the temperature of millet is 30-35℃, evenly sprinkle koji strains, or stir with hands or tools until the rice and koji are evenly mixed, and then put them into a container. A V-shaped notch can be dug in the middle of distiller's grains, so that the fermented mash is easier to ventilate and it is convenient for us to observe the juice of the fermented mash.

5. Cover the bottle mouth with sterilized sealing cloth, and use rubber band externally (if the temperature is too low, you can wrap the glass jar with clean cloth or towel to keep the temperature at about 30℃).

6. Cold water 0.5 times the weight of raw materials can be added on the 2nd to 3rd day, and when sugar, wine and water decomposed on the 5th to 7th day are continuously produced, the juice is squeezed for eating or then put into the refrigerator for cold storage to delay fermentation (the alcohol content at this time is about 5-7 degrees).

7. Grasp the fermentation time by yourself. If the fermentation time is too long, the juice will be more, but the liquor will gradually become clear, the alcohol content will be improved, and the taste will be a little bitter. At the same time, it will also produce tail acid, which will become high alcohol and sugar-free after brewing for a long time. It can also be distilled into millet wine according to personal preference.
