Bake the pipa legs in the oven 15 minutes. Pipa leg comes from the calf part of chicken leg, that is, the part between chicken feet and thighs on chicken leg. Because it looks like a pipa after being cut, it is named Pipa Leg, also called Chicken Leg.
1. Wash the fresh drumsticks and pipa legs with clear water (if they are frozen, they need to be fully thawed), and use a steel fork or toothpick to make several small holes in the fleshy drumsticks.
2. Put the chicken pipa leg into a container, add a spoonful of cooking wine, a spoonful of soy sauce, a spoonful of oyster sauce, a proper amount of salt and a little white pepper, and rub all the seasonings on the chicken pipa leg by hand and marinate for about ten minutes.
3. Take out the marinated drumsticks and pipa legs, add a proper amount of Orlean barbecue dry materials and stir well again. Seal the container with a suitable cover or plastic wrap, and then put it in the refrigerator for more than eight hours. (It can be pickled one night in advance)
4. Prepare three shallow containers, respectively, and fill them with appropriate amount of corn starch, bread crumbs and egg liquid evenly stirred by two eggs, and wrap the pickled chicken legs and pipa legs with corn starch, egg liquid and bread crumbs in turn.
5. Spread a layer of tin foil on the baking tray, put the pipa legs covered with three layers of external paste on the baking tray, and gently press the chicken pipa legs covered with bread crumbs by hand to make the bread crumbs stick tighter and make the skin of the chicken pipa legs more brittle.
6. Adjust the oven temperature to 190 degrees ten to fifteen minutes in advance to preheat. After preheating, put the baking tray with chicken pipa legs in the middle of the oven.
7. Adjust the ignition temperature of the oven to 190 degrees, and adjust the ignition temperature to 185 degrees to start baking. According to the performance of the oven, the baking time is generally 25 to 35 minutes.
8. When the chicken pipa legs in the oven are baked until the skin is golden and the bread crumbs are crisp, you can turn off the power, take out the baking tray, and let the heat dissipate a little, so you can eat.
